White Chocolate Chip Cookies

I made my first batch of cookies on christmas eve for Father Christmas. This was how I made them and he must have liked them, as in the morning they were all gone !!

Ingredients

4 oz margarine
1 3/4 oz caster sugar
3 3/4 oz Billingtons dark brown sugar
1 egg
1/2 tsb vanilla essence
6 oz Allinson self raising flour
1 packet Silver spoon white chocolate chips

Method

Preheat oven to 180 degrees ( Gas mark 4 )

Grease 2 baking sheets ( or line with greaseproof paper )

Mix together the margarine and sugars together until light and fluffy

In a seperate bowl, mix together the egg and vanilla essence

Slowly start to add this to your other mixture, stirring all the time

Sift in your flour and fold / stir

Add your chocolate chips ( mix really well )

Get a teaspoon and start scooping your mixture in heaped piles about 2 inches apart on the baking tray.

Bake your cookies until they are lightly coloured for about 10-15 minutes

When you take them out they will still feel vert soft to touch but they will harden up as they cool

Transfer to a baking rack to cool

You should then end up with delicious soft chewy cookies !
